While in Brooklyn, Ny. over the 4th of July weekend, I stopped by Jacques Torres in the DUMBO area of Brooklyn. While there, I picked up a box of their French Kiss cookie mix.
Today, I had a hankering for them. I also had to go off the cuff today and have some milk with them. I am not supposed to have American milk so much these days. Too many added hormones to the milk and it wrecks my skin. Funny how I can have regular milk or raw and unpasteurized milk in Europe with no problems whatsoever. I have no idea if it will do it now, but if it does, it was completely worth it to have these super rich and disgustingly good and messy cookies.
One box of cookie mix with Belgian chocolate disks. All you need is 1 stick of butter and one large egg.
A few tips:
I added a tiny hit of vanilla extract for some added liquid to the mix. You can also add a small hit of almond extract instead which works awesomely with cookie dough.
These are supposed to be big and only yield about 14 to 16 cookies. When mixing the dough, it might look like they will not yield that much, but they do.
They are so super gooey that a cooling rack is NOT a good idea until they have sat out and cooled on their tray for a longer period of time than you would allow for normal cookies.
I found that I manually formed most of these cookies. The disks are so big and I wanted to avoid having some with little or no chocolate and some being all chocolate.
You MUST have these with milk! They are so rich and chocolate-y that you simply can't avoid a glass. Also, if you eat them warm, they are single handedly the most gooey and messy cookies I have ever eaten.
