Seattle Chocolates

Now we're talking. After having the Chuao Milk chocolate bar with Potato Chips, I follow up my filled bar appreciaton posts with a milk chocolate bar filled with graham and marashmallows. I am all about anything S'Mores. 

Seattle Chocolates has a line of truffle bars and this Campfire S'More bar is one of them. I also have their birthday cake bar pending a review. I picked these up at Beacon Hill Chocolates in Boston. 

 

Campfire S'More

 

Type: Filled, milk chocolate

Varietal: Unknown

Ingredients: Milk chocolate; sugar, cocoa butter, whole milk powder, chocolate liquor, soya lecithin, pure vanilla. Graham biscotti; enriched wheat flour [wheat flour, niacin, reduced iron, thiamin mononitrate, riboflavin, folic acid], sugar, butter, eggs, baking powder, natural flavors, salt. Marshmallows; Corn syrup, beet sugar, corn starch, corn dextrose, water, carrageenan, soya protein, natural vanilla flavor, titanium dioxide. 

Sample Size: 2.5 oz or 70g

 

Nice thick bar with simple patterend, but non-monogrammed molding. Appeard to have generous "fixin's" or S'Mores bit in it. Smells sweet and creamy like good milk chocolate should. Chewy marshmallow bits, creamy and sweet milk chocolate, but not enough graham taste or bits in it. In fact it's really quite skimmpy on the graham, but the overall taste is there. It does taste like a S'More. Just perhaps a bit more on the sweeter vanilla side with the chocolate and marshmallow dominating. 

One thing that maybe a little petty to point out and may not entirely matter, is the name Campfire S'More. While all the ingredients are there, campfire makes me think charred marshamallows. I wonder if they could have charred them a bit before putting them in the chocolate. Char then, cool them, then put them in. It might make that name a bit more authentic and the taste bit more dynamic. 

Very sweet filled bar of chocolate.The flavors were there, the textures were all there with chewy marshmallow, creamy milk chocolate, faint hints of graham though. My only gripe is not enough graham crackers through out the bar and not enough graham cracker taste. It's there on the finish but as an afterthough and not really as an entire S'mores picture. I can't help it, I am a sucker for graham crackers. The milk chocolate is good and creamy and smooth with a nice melt time on it.

Beacon Hill Chocolates

I had a very nice time stopping by this little gem on Charles St. in Boston. I had been meaning to get over there for some time. I finally got my chance and I was very happy with them. The ladies who work there are very attentive and sweet. They are passionate and will engage you in good conversations about chocolate. They will gladly walk you through everything in the store. I haven't run into customer service this good in a while. 

This, however, is their evil plan. They are so nice to you that you wind up with the whole store in your hands before you leave. At least I did anyway. I went in for one thing and came out with more bars of chocolate, S'Mores pops, a scoop of mint chocolate gelato, truffles, and hot chocolates. It could have been a lot worse. I already have a ton of bars back logged for review and archived notes to post, but no, I just had to walk out with even more stuff. Their evil plan of "kill with exceptional kindness" completely worked on me.

Truffles

Creme Brulee: White chocolate vanilla bean ganache with raspberry Chambord jelly in a white chocolate shell.

 

Very pretty truffle. I love the surface design. Very sweet, good creamy white chocolate and white chocolate vanilla bean ganache, with lovely raspberry Chambord filling. But I failto see how this is really like creme brulee except for the vanilla bean. It's very vanilla and lovely raspberry, but no burnt sugar taste. Still a very pretty truffle. I liked this one a lot. 

 

Key Lime: Hand painted white chocolate shell and key lime ganache.

 

Tangy truffle, buttery white chocolate balance. Lingering flowery key lime taste. Very nice truffle. 

 

Salted Butter Caramel Butterfly: Robust, burnt caramel is enhanced with savory salted butter in a milk chocolate butterfly shell.

 

Sweet, buttery, and creamy with very soft and gooey caramel center, nice milk chocolate shell. A little burnt flavors, but not as described and no salty characters. This is a delicious sweet caramel truffle, but the lack of slat was a little disappointing. I can't say it wasn't great though. It was awesome. It just didn't taste like it was described. 

 

Chocolate Martini Truffle: Dark chocolate ganache flavored with Grey Goose Vodka, dipped in a rich dark chocolate shell with a hand painted martini glass.

 

Deep rich chocolate, robust vodka flavor, no heat or esters, but definitely there on the vodka taste, and almost has a hint of cinnamon to it. Very rich truffle. 

 

Blood Orange Fleur de Lis: Dark chocolate ganache infused with lush blood orange inside a hand painted Fleur de Lis dark chocolate shell.

 

Deep bitter, but fresh orange taste, deep rich chocolate. The Blood orange balanced sweeter with the chocolate and has very nice lingering orange oils. 

 

Pumpkin Spice: Hand painted milk chocolate ganache with pumpkin pie spices. 

 

 

This was a mystery truffle at first. I didn't have a list of the truffles I bought. But then I took a bite and was happy to find it was a pumpkin pie spiced truffles. I am not sure if this actually has pumpkin puree in it, but it was creamy, soft, very warming, wonderfully spiced, and buttery. The milk chocolate was the right way to go with this truffle. Loved it! 

 

These next truffles are a little ashy due to me having to wait to eat them. I reviewed half the box because I couldn't sit here and eat 12 truffles in one sitting. Then I had to go to Denver for the Great American Beer Festival. The ashiness is due to me leaving them, and were not the condition I bought them in. See the box of truffles pic above. 

 

Dragonfly: Dark chocolate ganache with essence of Kaffir Lime leaves and silky coconut milk embedded with a piece of candied ginger.

 

This one wasn't my favorite. This is my problem though. I am not a big fan of candied ginger. This however was very light in flavor. It was pleasant and not overwhelming except for the ginger to me. There was barely a coconut taste, the ginger dominates but is toned down by the chocolate and the Kafir lime leaves were a nice rounding flavor on the truffle. It's actually quite nice. You will just have to forgive me as I can't personally stand candied ginger. 

 

Lavender Truffle: A delicate milk chocolate truffle infused with French lavender blossoms, coated in 64% dark chocolate.

 

Very robust lavender taste. This was a bit too much for me. It wasn't fresh lavender, it was musky like stinky, French soap. Perhaps milk chocolate was too soft for the lavender. The shell was a lot more illustrious when I first got it. This picture isn't doing it justice on how pretty it was. But frankly speaking, it was too funky for me. 

 

Seduction: Combination of Portuguese Port Wine and chocolate ganache.  

 

 

 

This is a really nice truffle. Deeply rich, and fruity. Complex fruits like deep raisins and a bit of a balsamic taste. Very nice. 

 

Chile-Limon Mayan Truffle: A special blend of dark and milk chocolate ganache infused with Southwestern chilies and house-made lime marmalade.

 

Lightly spicy as far as the heat goes, a little warming, but spicy chili taste, and slightly tangy. Soft smooth texture, but I wish it had more of that lime taste. And as someone who is a total wuss about spicy heat, I felt like it could have been more on the chili's. But the flavor was right. This was a pretty cool truffle over all. 

 

Dark Chocolate Cat: Extra-bittersweet ganache in the shape of a cat with sunflower seeds for ears, enrobed in dark chocolate.

 

I call this the Bruiser because it looks like one of my wild "chirruns," Miss Bruiser Alstrom. This is a straight up super rich dark chocolate truffle from Moonstruck in Oregon. Cute and fun Halloween truffles. This may be a bit too rich for kids, but still cute none the less. And little sunflower seeds for ears. 

 

Olive Oil and Sea Salt: Dark chocolate ganache infused with a touch of olive oil and topped with sea salt. 

 

Nice savory olive oil taste and good balance of salt with the dark chocolate. I kind of wish this one was a caramel. But the dark chocolate held on to the olive oil taste well. Really nice truffle. 

La Maison du Chocolat ~ Pariguan 69%

A Porcelana bean bar from La Maison du Chocolate in Gay Paree. Actually, it's from one of their shops in London courtesy of Angelo Scarnea again. Named after the plantation, Porcelana Criollo del pedregal, in Venezuela. Valrhona couverture.

In doing some light searching about this particular plantation, I found that Valhrona uses the plantation for these Porcelana beans. I had to guess that La Maison used Valrhona as couverture. This was confirmed to me by Stuart Robson, Whiskey and Chocolate aficionado, who used to work for La Maison. The founder of La Maison, Robert Linxe worked closely with Valrhona on certain ventures. I believe that not everything is made with Valrhona coverture, but this bar is.

Chocolate companies should really make that more clear. It's not like it's top secret information or trade secrets. If you use courverture, just say so. Or please list your information properly on your websites.

Pariguan Noir 69%

 

Type: Bittersweet, 69%

Bean Varietal: Porcelana, Criollo varieties

Ingredients: Cocoa paste, brown sugar, cocoa butter, soy lecithin, vanilla.

Sample Size: 75g or 2.6oz

Lot #: LP7510312

 

Appearance: Smooth surface, flat large squared tablet, slightly textured surface with a simple monogram on each square. Medium brown color. One minor scratch on the surface.

Score: 93

Snap: Good firm snap, good snap sound, and clean break lines.

Score: 93

Aroma: Very acidic right out of the package, tar, and cherries, but then softens up quite a bit with a nice floral aroma, soft muted roasted cacao.

Score: 90

Taste: Sweet, very sugary sweet, lightly acidic, cherries, wood, pen ink, slightly nutty.

Score: 87

Texture: Smooth, creamy, fast melt time.

Score: 93

 

This has all the hallmarks of fantastic Venezuelan cacao, but I feel like a lot was lost due to too much sugar. And while it doesn't have an immediate intense acidic quality to it, it's pretty tangy. There are deep tart cherries, ink, rich wood flavors, and a little bit of nuttiness in there. I love these flavors, but the sugar tore my palate up. It made it difficult to focus on these flavors and fully understand them better. It was too sweet and that's why I gave it a lower score.

The aroma is everything is says on the package, but really soft. It's big and citrus-y right out of the package and then softens to a nice floral aroma and soft roasted cacao. There really wasn't a lot going with this aroma and it dissipates so quickly leaving only a light roasted aroma and some smoke. That's why it didn't score that high. It's good for a few minutes, but doesn't last long.

Technically every thing else was right on the mark. It's snap was fantastic, the surface was flawless barring one very minor, superficial scratch. You need to click on the image and see this bar up close to know what I am talking about with the sort of textured surface. It doesn't look like it from the small pictures but you can see it when it's enlarged. The texture was excellent. The technical elements hold this chocolate up. If it weren't for the addition of all that sugar on this bar, I think they could have had and A+ bar here.

Galler ~ Heritage Noir 70%

 

 

Galler fine Belgian chocolate. Like a breath of fresh air in Brussels. La Grand Place is loaded with bad tourist chocolate and kitschy shops. Galler is a small gem among the waxy, milky, tourist chocolate pandered in in every shop other. Belgium is so proud of their chocolate status, but they ought to be ashamed of themselves for what they pander to tourists. Then again if I lived there, I wouldn't want every single tourist flooding my favorite places either. Thankfully there is Galler. There is a Tasse and a Valrhona (French) available too.

Beautiful and simple packaging and colorful at the same time. Nice neat shop, very pristine albeit a tiny shop.

Type: Bittersweet, 70%

Bean Varietal: Unknown, blended cacaos

Ingredients: Cocoa mass, sugar, cocoa butter, soy lecithin, natural vanilla.

Sample Size: 100g or 3.5oz

Lot #: L1611008

 

Appearance: Thick-squared, monogrammed tablet, slight beginnings of bloom, lightly ashy and dusty in the molding lines, smooth unblemished surface, deep dark chocolate brown color.

Score: 89

Snap: Fairly weak snap. The mold lines were thin so it gave way to a light crisp snap despite how thick the squares are. Clean break lines.

Score: 87

Aroma: Lovely soft roasted cacao, lightly smoky, marshmallows, and butter. Very soft and subtle.

Score: 93

Taste: Lightly sweet up front, good balance of sweet and bitter, nutty, buttery, lightly fruity, toasted, marshmallows,

Score: 95

Texture: Hard, slightly waxy up front, then opens up to a creamier texture. Medium melt time, smooth texture.

Score: 87

 

This is a very "up and down" bar of chocolate for me. Very smooth and unblemished surface yet slight bloom, big thick squares and a puny snap, soft aroma but fully flavor, sweet but bitter, hard and waxy then a creamy, smooth texture, and lastly a sweet fruity character with buttery marshmallow tastes. Up and down, up and down.

This chocolate doesn't expire until Dec. '11, but slight dusty sugar bloom was beginning to present itself on an otherwise unblemished surface. Nice and neat molding. Large squares on this tablet.

The aroma was very soft and subtle. Marhsmallows, butter, soft roasted cacao and smoky characters. This tells me it's a South American blend of some kind, but I don't know what this particular blend is.

A good balance of bitter and sweet with the sugars. It tasted like butter, toasted characters, and marshmallows, with a soft underlying fruity character. The texture was the weird part. Hard and waxy at first, and then it finally softens and opens up into a creamy and smooth texture. Again, with that up and down quality.

I really enjoyed the up and down qualities on the taste. It really did taste great. But all the other ups and downs give this a very low scoring B+. A B+ none the less. It's taste saves this. But I am not going to lie, I expected more.

Slitti ~ Super Novanta Amazzonia 90%

 

 

 

Slitti Super Novanta Cioccolato Fondente Extra 90%. Super Ninety, extra bitter dark chocolate.

Slitti are a family of coffee roasters stemming back from 1969, who added the addition of chocolate making in 1988 by Andrea Slitti, son of Luciano. Luciano ventured out to make and roast his own coffee to serve superior coffee instead of the coffee he was serving, which he thought was swill.

Following his fathers footsteps and building upon his own creativity, Andrea ventured off into chocolate. A jump that didn't take much pushing since they pursue cacao beans from the same regions they source for coffee.

This was picked up for me by Angelo Scarnera on a trip to Italy. Tuscan chocolate! I can barely contain myself. My love for Italian chocolate knows no bounds and Angelo knows it. I have a special place in my heart after trying Venchi's 85% Cuor di Cacao. It's a big chocolate that you wouldn't know just how big it is based on how well they smoothed out the edges of of this chocolate. No sharp acidity. Lot's of bold flavors and less sugars, but unlike any other big chocolate I had tasted before. That was my introduction into fine chocolate and was the standard I held for a long time against other chocolates. Not wanting some big, robust, acid bomb chocolate that jabs you in the neck when you eat it. Once I knew it was possible to tame chocolate this way, I had to learn more.

I am hoping this big 90% bar will yield similar results. I have such a sensitive palate towards bitters. It's surprising being that I am also a major hop head in the beers I like. Double IPA's bring them on. Women tend to have a higher sensitivity to acidity and bitters. This was from research I have previously done on super tasters, women, and beer. Beer is the best example I can give here, if a beer is 60 IBU's (International Bittering Units) a woman's palate can taste it as high as 65% and in more extreme cases 70% due to a sensitivity to acids and bitters. So, like the beer it's interesting when you find women that like their coffee extra bitter, or their chocolate extra robust. This is not the case for every woman or every person. Taste is 100% subject and there can be many factors that effect a persons individual palate.

Now, we'll just have to see if the review for this bar matches what I was hoping for.

 

 

Amazzonia 90%

 

Type: Bittersweet, 90%

Ingredients: cocoa mass, sugar, cocoa butter, and natural vanilla.

Bean Varietal: Unknown, probably Criollo and Trinitario blends.

Sample Size: 100g or 3.5 oz

Lot #: 1623

 

Appearance: Smooth shiny surface, large-squared tablet, simple molding, a few matted marks on the surface from plastic wrapping, very dark and deep rich brown color.

Score: 92

Snap: Firm crisp snap, light cracking sound, clean break lines.

Score: 93

Aroma: Very light aroma. Soft roasted cacao, light hints of coffee, almonds, wood, a very subdued layer of berries, and small hints of cinnamon.

Score: 93

Taste: Bold, deeply bitter, no acidity, surprisingly fruity, coffee notes, excellent wood flavors and leathery notes, very complex.

Score: 95

Texture: Dry and hard, slow melt time. It does eventually open up to a softer and creamier texture, but still very dry on the palate. 

Score: 87

 

Despite it's texture this was most excellent. It renews my faith in Italian chocolate makers. The texture is rather dry and chalky up front. It does eventually soften up but is still very dry. It's the only qualm I have with higher cocoa percentage bars. That is if they're balanced right, it's the only beef I have with them.

I try not to take too many points away for plastic matting marks unless it's really bad. These were a little bit bad and make the shiny bar look a bit ashy, but it wasn't ashy. I should be more critical of that, but I like chocolate kept in plastic. It retains it's freshness longer. And a few superficial marks like that shouldn't be a big detraction. Especially not when the bar is in pristine condition. This bar had no nicks, no ashy qualities, no tempering issues. Just some minor plastic issues.

The flavors are deep complex. Very bold, biter and rich cacao, huge fruity, berry flavors coupled with big roasted cacao flavors, wood, and leather. This is definitely Venezuelan cacao, and definitely not coastal. I wish I knew where in the Venezuelan Amazon they were sourcing their beans from. As small as Venezuela is, they have the most distinctive regions for cacao growing. It's amazing that the more I taste chocolate the more adept I am becoming at identifying regions. I am not that good yet, but it's coming along.

I am most impressed by the taming of the acidity. It's just what I wanted from this bar. All bold and rich complexities of the chocolate, bitterness included, but no offensive acidity that interferes. All raw flavor.

Hardcore beer drinkers will no doubt love something like this. They tend to lean more towards the less sweet and more robust and raw flavored chocolates. While this chocolate is still a bit too big for me to regularly eat, I will most definitely bake with this and it will be wonderful. I can only imagine now how fruity and deeply rich the cake will be. Surely, it will be a cake as the next thing I bake.

Fleur De Sel Caramel Brownies

 

 

 

Chewy caramel mou salt caramel brownies using French fleur de sel butter "Paris Caramels" and TCHO Baking Drops. Yes, these were every bit as delicious as they sound.

 

I have had these caramels sitting in my pantry ready to be eaten, but I didn't want to eat them selfishly all by myself. I wanted to bake with them. I thought about melting them down for a salt caramel glaze on cinnamon rolls, or cup cake filling. I had a lot of options until I started thinking about Paul A. Young's salt caramel brownie. I have never had it before, but it just sounded AH-Mazing.

I followed the Brown Eyed Baker's recipe for Salted Caramel Brownies, but I tweaked my own caramel sauce. I also didn't mess around with the chocolate. I just used TCHO baking chips which had a big nutty flavor despite their description of intense chocolate flavors and fruity flavors.

 

 

Salted Caramel Brownies

Yield: 16 brownies

Prep Time: 15 minutes | Bake Time: 35 to 40 minutes

5 ounces semisweet or bittersweet chocolate, chopped
2 ounces unsweetened chocolate, chopped
8 tablespoons (1 stick) unsalted butter, cut into quarters
3 tablespoons cocoa powder
3 eggs
1¼ cups granulated sugar
2 teaspoons vanilla extract
½ teaspoon salt
1 cup all-purpose flour
Salted Caramel Sauce (click Brown Eyed Baker link above for their Caramel recipe)
Fine sea salt

1. Adjust an oven rack to the lower-middle position and heat the oven to 350 degrees F. Spray an 8-inch square baking pan with nonstick cooking spray. Line the pan with overlapping pieces of foil and spray the foil.

2. In a medium heatproof bowl set over a pan of almost-simmering water, melt the chocolates and butter, stirring occasionally until smooth. (Or, melt in the microwave on 50% power for 30-second increments, stirring after each, until melted and smooth.) Whisk in the cocoa until smooth. Set aside to cool.

 

3. Whisk together the eggs, sugar, vanilla, and salt in a medium bowl until combined, about 15 seconds. Whisk the warm chocolate mixture into the egg mixture; then stir in the flour until just combined. Pour about half of the brownie mixture into the prepared pan and spread into the corners. Spoon 9 dollops of Salted Caramel Sauce on top of the brownie batter. Top with the remaining brownie mixture, spread into the corners and level the surface with a spatula. Again, spoon 9 dollops of the Salted Caramel Sauce on top of the brownie batter. With a dull butter knife, gently run it through the batter to swirl the batter just a bit (don’t do it too much or it will all mix together). Sprinkle a bit of sea salt on top.

 

 

4. Bake until slightly puffed and a toothpick inserted in the center comes out with a small amount of sticky crumbs, 35 to 40 minutes. Cool on a wire rack to room temperature, about 2 hours. Remove the brownies from the pan using the foil handles and transfer to a cutting board. Cut into squares. Brownies can be stored in an airtight container at room temperature.

For my caramel, I melted down 36 caramels or 2 packs of 18 piece Paris Caramels with some heavy cream, about 3 tbls worth. Melted over a double boiler until blended and smooth. Then I followed the directions above for puting the caramel in between the batter and on top.

I also had some extra baking drops that dropped on top of the caramel in the center of the brownie mix. I put the chocolate drops on top of the brownie mix on the top layer and covered with caramel.

The caramel is perfectly fine to bake and won't become overly hard once cooled. It leaves a chewy caramel mou and not a soft and super runny caramel. It leaves much more stable brownies. Monitor your baking time. I found I needed longer than the recipe called for by about 15 minutes or so.

 

Blurry but fun up close of the caramel. Why oh why do I always use my iphone and not my $700 Nikon? The pictures may not have done these brownies much justice, but trust me when I say, they were incredible.

 

Three Origin Chocolate Pudding

 

 

If you are a chocolate advocate like me, when you get a hankering for something chocolate it can't just be plain old chocolate. So, when I got a craving for chocolate pudding, one so strong I could have taken someone's arm off for it, I decided to make some real pudding. Real chocolate that is. I gathered up some scraps of previously reviewed chocolate and melted it down.

Please excuse my iPhone pics. I didn't initially intend on blogging about this pudding, but after some choc-gasmic reflecting, I thought I should share it anyway.

I followed a simple recipe from Smitten Kitchen. I melted down Pralus Cuba 75%, Rogue Piura 75%, Mast Brothers Dominican Republic 81%.

 

Silky Chocolate Pudding
Adapted from John Scharffenberger, via Wednesday Chef

Serves 6

1/4 cup cornstarch
1/2 cup sugar
1/8 teaspoon salt
3 cups whole milk
6 ounces 62% semisweet chocolate, coarsely chopped (I used good quality semisweet chocolate chips; use 70% bittersweet if you want more of a dark chocolate kick)
1 teaspoon pure vanilla extract

 

1. Combine the cornstarch, sugar and salt in the top of a double boiler. Slowly whisk in the milk, scraping the bottom and sides with a heatproof spatula to incorporate the dry ingredients. Place over gently simmering water and stir occasionally, scraping the bottom and sides. Use a whisk as necessary should lumps begin to form. After 15 to 20 minutes, when the mixture begins to thicken and coats the back of the spoon, add the chocolate. Continue stirring for about 2 to 4 minutes, or until the pudding is smooth and thickened. Remove from the heat and stir in the vanilla.

 

2. Strain through a fine-mesh strainer (or skip this step if you’re a slacker like me who is absolutely certain that there is nary a lump her puddin’) into a serving bowl or into a large measuring cup with a spout and pour into individual serving dishes.

3. If you like pudding skin, pull plastic wrap over the top of the serving dish(es) before refrigerating. If you dislike pudding skin, place plastic wrap on top of the pudding and smooth it gently against the surface before refrigerating. Refrigerate for at least 30 minutes and up to 3 days (ahem, good luck with that).

I spent 3 glorious days eating this miracle of chocolate. They were the best days of my life.

Chocolate Oatmeal Face Mask

 

 

Okay, so remember a few weeks ago I made a quick post about chocolate face masks and how to make them yourself at home? Well, I went ahead and tried one and it worked really well.

Make sure you wash your skin before applying. A helpful and natural tip is to cleanse the face, then use witch hazel as a toner. Also use on a Q-Tip with apple cider vinegar for any trouble spots before using the mask. You want that on on your skin first. You can also use the apple cider vinegar on the trouble spots after you wash the mask off. And be sure to moisturize.

I took some old scraps that had gone passed their prime for eating. Chocolate does have an extremely long shelf life, but these were passed that. Mostly I take chocolate bars, eat enough to review and fully understand, then I take the left over scraps and bake with it. But recently my stock pile is just too much. So, this is a good way to use the chocolate in a constructive way without having to throw it away.

 

I took leftover scraps of a Patric Chocolate Madagascar bar, L'Artisan du Chocolat Jamaica, and some Paul A. Young Valrhona bar scraps. All bitter sweet and 70% and over. I melted them down over a double boiler, I pulled the chocolate off before it all completely melted. Then I added oatmeal and honey and I let it cool down.

 

On whim, I decided to go ahead an add course turbinado sugar after the mixture had cooled so it wouldn't melt the sugar crystals.

I slathered it all over my face and waited for about 15 to 20 minutes. It was a bit messy to apply, but the trick is to go around the face more than once with the mixture. Each time you go around, it goes on thicker and thicker. The oatmeal might fall off a bit but overall it stayed on pretty good.

Washing it off, the oatmeal and sugar acted as a face scrub. It felt a little waxy as it was being washed off and I thought I might have to do a second wash with some face soap. But, I didn't have to. It all washed off clean, and my skin was brighter and extremely soft.

Having a glass of red wine while you mask is also fun. The antioxidants in wine is good for you to. You will feel like you are in a spa. Wine, masks, and Ed Norton on tv. La vita è bella!

It will be a while until I see any long term effects because I plan to do this more often. But for now my skin is actually brighter and my face feels a lot softer. Fantastic chocolate experiment.

 

20°N & 20°S Presents: The Top 10 Best Chocolate Makers

 

 

This is a collection of the best Bean-to-Bar that I have tasted so far (2010 -2011) with a few honorable mentions at the end. This isn't an exact reflection of what is available on the market, this is based on what I have personally reviewed and tasted so far.

After going through a lot of chocolate, and I mean A LOT of chocolate, and Lord above help me now, I still have WAY more to try, I have decided to present my findings thus far on whom I think are some of the best chocolate makers in the world. It's only me judging. It's based solely on my tastes and preferences and should be considered 100% subjective. This list will change every year, naturally, as more and more chocolate is introduced into my life. If you are a chocolate maker and are not on this list, either try harder for my affections, or send me products because I may not have had it yet!

You will notice if you go back and scroll through older reviews, that my review style is noticeably changing. This is the point exactly of my journey through chocolate. To learn about and grow with it. And to understand my own palate better. I have no intention of changing the old reviews, but rather move forward get better with time. I only bring this up because as I scroll through older reviews, I am totally laughing at myself. Some are vague, and some are overly descriptive. I am learning people, I am learning!

Melange ~ Mixed Flavors, White, Milk, and Dark

 

 

Angelo comes through for me once again. I asked specifically for some more Melange Chocolate tasting samples, or as I call them, chocolate straps. Thin tasting bars of flavored chocolate. Last time the flavor pack was all dark chocolate. This time I thought it was an all-milk tasting. To my surprise, it was a mix pack of white, milk, and dark.

 

 

Unless things have changed at Melange, the chocolate base used for these chocolates is from Belcolade, Belgian chocolate couverture.

I don't review these particular tasting straps the same way I normally review chocolate. They are too thin for a snap quality, they have been damaged by travel from the UK to the US (Not anyone's fault, they are just very fragile.) Some people have more of a weighted system towards their review marks, but I do not. I take the time to explain in full detail what each score means and why it received the mark that it got. With these kinds of tastings, I will just explain the taste, texture, and aroma and give a general score based on my own personal tastes.

 

Matcha & Strawberry (White Chocolate)

 

Ingredients: 28% cocoa butter, milk powder, sugar, lecithin, natural vanilla, matcha, and strawberry.

Type: Flavored White Chocolate, 28% cocoa butter

 

It's appearance doesn't quite show up the way I wanted it to in these pictures. It looks more yellowish based on the photos, but really it's more of a soft lime green color.

It smells like classic white chocolate, creamy, fatty, buttery, and soft. It has more of a lime aroma than a strawberry aroma. More citrus and fatty cream notes. Classic white chocolate aroma is dominating over everything else. I don't smell the matcha which hardly has an aroma anyway unless it's wet leaves or it's flavored, and the strawberry is barely there leaving a tart aroma that is more like limes.

Tastes like very rich and creamy white chocolate, buttery, rich creamy texture, virtually no strawberry taste at all, it's a little fruity, but mostly it's rich, and milky, has a bit of a grassy lingering flavor from the matcha. The last flavors on this chocolate are the strawberries. I'm a little disappointed that it's that faint or subtle. At least it presents itself though, but not until the very end through retro-olfaction.

I think this is actually fairly nice for white chocolate. I am not a big fan of it in general, but this was very nice. I only wish the flavors were a bit bigger. More of that grassy, green, matcha flavor, and bolder strawberries. The white chocolate flavors dominate so much that you are only left with lingering tastes of the matcha and strawberries. It could be so much better.

Coriander & Grapefruit (Milk Chocolate)

 

Ingredients: 33% cocoa mass, cocoa and cocoa butter, milk powder, sugar, lecithin, natural vanilla, coriander and grapefruit.

Type: Flavored milk chocolate, 33%.

 

Light creamy milk chocolate color, lightly citrus-y on the nose and soft and subtle coriander. Creamy milk qualities with a very slight smoky aroma. They coriander was big right out of the package as was the lightly smoky aroma, but then it tames itself down for a nice creamy soft milk chocolate aroma with light hints of the citrus grapefruit and the spicy coriander. Soft and creamy texture, but a little bit of grit from the coriander spice.

Coriander right up front, very soft grapefruit, more like sweeter red or pink grapefruit, less tart and bitter citrus notes. Very soft and gorgeous flowery taste on the finish. Very slight though. Creamy milk taste on the chocolate with a few peanut notes. Sweet milk chocolate. The coriander and grapefruit are toned down quite a bit on the second and third tastes of this chocolate. The first taste the spice and the fruit are very present, the rest of the time it's all about the creamy milk chocolate and that lovely aftertaste.

Coffee and Aniseed (Milk Chocolate)

 

Ingredients: 33% cocoa mass, cocoa butter and cocoa solids, milk powder, lecithin, natural vanilla, coffee and aniseed.

Type: Flavored milk chocolate, 33%

 

Black licorice. That is the dominating aroma. Not even subtle aniseed aromas but straight-up black licorice. Creamy milk chocolate aromas with a subtle smoky hint. No coffee on the aroma at all. Light brown color with black flecks pepper through out the strap.

Sweet milk chocolate, excellent balance of coffee and aniseed up front. The coffee makes the peanut-y taste on the milk chocolate present itself more. Coffee is more roasted at first taste and then has more of a grind flavor. Despite the black flecks in the chocolate, it's not gritty. Coffee ends up the dominating flavors int he end. The aniseed was very much up front on the first taste of this chocolate and then takes a back seat. Creamy, soft texture.

I only wish the licorice hung around longer and interacted more on this chocolate. It dominates the aroma and then plays nicely with the coffee but then never comes back through the rest of the tasting. Overall though it was good tasting milk chocolate with a good blend of flavors.

Raspberry & Rosemary (Dark Chocolate)

 

Ingredients: 72% cocoa solids, Cocoa butter and cocoa solids, sugar, lecithin, natural vanilla, raspberry and rosemary.

Type: Flavored bittersweet, 72%

 

This one had an interesting nose right out of the package. It had tart raspberries, a little smoky chocolate, and a strange aroma that reminded me of yellow mustard and ketchup mixed together. The rosemary on the aroma wasn't as dominating as you might think which left a strange interaction between the cocoa and the raspberry. Deep dark chocolate color.

Nice rich dark chocolate flavor, lightly sweet, light raspberry, and lovely rosemary. Despite the strange aroma, the flavors are really nice. The texture is a little chalky and dry, but it's not overbearing. Deep dark chocolate, roasted cocoa interacts nicely with the rosemary, raspberry flavors are very soft, and hard to find in the middle of the bold and rich chocolate and dominating rosemary flavors. The rosemary is strong but not overpowering. There is a little bit of raspberry at the end of the tasting. It lingers on the palate and you can taste it through retro-olfaction.

Very nice chocolate. It is getting the score it's getting for that initial strange aroma, and being a bit drying and chalky on the texture. But the flavors are awesome with the deep rich chocolate. I just wish the raspberry stood up more in this chocolate. It's there but kind of hiding in the background to the rosemary.

Cardamom & Cloves (Dark Chocolate)

 

 

Ingredients: 72% cocoa mass, cocoa butter and cocoa solids, sugar, lecithin, natural vanilla, cardamom and cloves.

Type: Flavored Bittersweet, 72%

 

All cloves on the nose. A slight undertone of green cardamom, but the predominate aroma was cloves. Some roasted cocoa on the surface of the aroma, but it's dominated by the spice. Deep, dark chocolate color.

All cardamom on the taste. Bright green, fresh cardamom and deep roasted chocolate. No real hints of the cloves like the aroma suggests, a little spicy kick to the chocolate too. A nice roast-y, deep cocoa flavor lingering on the palate.

A nice play of flavors depsite only smelling one, and tasting the other. But the cardamom and dark chocolate together were very nice. And not all was lost for the cloves on the taste. I got a little tiny spice nugget later on that finally impacted the flavor.

The biggest theme with these chocolates was a sort of bait-and-switch with the flavor profiles. The nose has one strong aroma, and the flavor dictates another taste all together. Both of the dark chocolates were the best example of this. They were also the most surprising to me. Despite it's score, the Milk Chocolate Coffee and Aniseed was my favorite. The white chocolate had a lot of potential but I needed the flavors to be a lot stronger. The classic flavors of white chocolate just dominated the palate. It's one of the reasons white chocolate is not my favorite.

Once again, a very nice collection.
